The Soup Project.
I love soup. It is the ultimate comfort food. I make big pots and freeze individual portions so David and I will have something nourishing to eat when we are too busy or downtrodden to cook. I usually have 5 or 6 different soups in the freezer, and I’m always trying new recipes. I hope to keep adding to this list of recipes. Most of my soups are easy, and many are vegetarian or can be easily adapted to be vegetarian. The first soup is my Deep South Minestrone, which I have been making for almost thirty years. It is a recipe that begs the individual cook to make his or her adaptations.
